Valued for this unique smoothness and pleasant bite, it’s a beloved ingredient in Japanese cuisine—often found in miso soup or served atop soba noodles.

The distinctive mucilage is formed from dietary fibers secreted by the cells of Pholiota microspora, which create the smooth coating when exposed to moisture.
